Easy Scalloped Corn Casserole

Scalloped Corn Casserole is a flavourful, easy, casserole-style side dish.   I make it from fresh sweet corn, fat, cheese, and general awesomeness - the perfect side dish for Thanksgiving dinner!

YOU WILL NEED: Fresh sweet corn* Heavy cream Unsalted butter Large eggs  Ritz crackers Parmesan cheese Salt and pepper * See the linked post for details on using canned or frozen corn.

If using fresh corn, use a sharp knife to remove kernels from the corn cobs.

Transfer kernels to a large bowl, along with cream, melted butter, and beaten eggs.  Mix well.  

Add crushed crackers and cheese, season and spread in a prepared pan. Top with remaining cheese and cracker pieces.

Bake until top is golden brown and inside is fluffy, serve hot. Enjoy!
