So, say I don't want to dig out all my canning crap cause I'm not sure where it all is since the move...would these be equally as good as refrigerator pickles? I wouldn't be making an entire batch.

Yeah, these would be just fine as fridge pickles. We stuck one jar in the fridge without processing, because we were IMPATIENT. They were awesome 🙂
oh, good. I had just been wondering what to do with the beets I bought a while ago and that had been looking at me...
