Pumpkin Spice Cookies

These Pumpkin Spice Cookies are my seasonal take on a traditional rolled sugar cookie.  Tasty as is, and also fantastic to use for sugar cookie decorating!

YOU WILL NEED: All-purpose flour Brown sugar Butter softened Pumpkin Spice    Large eggs Vanilla extract Baking powder Salt Royal Icing* * If you're decorating them.  See the linked post for my royal icing recipes.

In steps, cream together butter, brown sugar, eggs, and vanilla.

Combine the dry ingredients, mix into the creamed butter mixture a little at a time. Wrap and chill the dough.

On a lightly floured surface, roll cookie dough 1/4" thick, and cut into shapes with your favorite cookie cutters.

Gather the trimmings, gently knead together, roll out and cut more shapes. Repeat to use up the dough.

Bake until lightly golden and cooked through. For VERY flat cookies, lightly press the tops down with a second baking pan while still warm.

Super flat cookies make the ideal surface when it comes to sugar cookie decorating. Either way, allow to cool.
