Easy Sushi Bake [Sushi Casserole]

This Easy Sushi Bake - or Sushi Casserole - is ridiculously easy to make, thrifty, and tastes far better than it has any right to! SO good.  Also:  It reheats really well - great for meal prep!

YOU WILL NEED: Sushi Rice Imitation Crab Meat Mayonnaise Seasoned Rice Vinegar Sriracha Sesame Seeds Furikake Large Egg Sesame Oil Sugar Salt

Following the linked recipe, prepare the seasoned sushi rice, then fold in the toasted sesame seeds.

Spread rice mixture in pan, press to flatten a bit.  Sprinkle with a nice layer of furikake seasoning, set aside.

Chop your imitation crab, then blitz in a food processor. Add mayo, season with sriracha, to taste, then stir the egg in.

Spread crab mixture over the prepared sushi rice in the pan, smoothing and pressing gently to level it.

Mix together remaining mayo and sriracha.  You can spoon it over the casserole directly, or use a pastry bag, like I do. Sometimes I’ll do a wasabi mayo mixture instead of - or in addition to - the spicy mayo.

Top casserole with another thin layer of furikake.  Sprinkle with black sesame seeds, then drizzle with the sriracha mayo.

Bake as directed in the linked recipe.   Serve hot, garnished with cucumbers, nori, green onion, and anything else you'd like! Enjoy!
