No-Bake Eggnog Pie

My No-bake Eggnog Pie may look understated, but it's the PERFECT balance of holiday flavors. The gingerbread spiced graham crust is fabulous - the perfect Christmas dessert!

YOU WILL NEED: Graham Cracker Crumbs Eggnog Whipping Cream Powdered Sugar Granulated Sugar Unsalted Butter Molasses Corn Starch Large Eggs Gelatin Rum Extract Spices & Salt

Whisk together graham crumbs, sugar, & spices.   Stir in molasses & melted butter until combined.

Dump crust mixture into an ungreased pie plate. Press mixture gently but firmly to compact the crumb mixture.

Whisk eggs together with sugar until fluffy and pale yellow. Add cornstarch and salt, whisk until incorporated and smooth. Set aside.

Bring eggnog & milk just to a simmer, then stream slowly into the egg mixture while whisking.  Once smooth, return to heat.

Cook until mixture is thick.    Remove from heat, whisk in butter & rum extract until butter is melted and mixture is smooth. Cool to room temp.

Whisk filling again, spread in the crust, cover with plastic wrap. Chill for 2 hours.

Following the linked recipe, prepare the stabilized whipped cream topping.

Spread whipped topping over the chilled pie.  Sprinkle with nutmeg, chill another 2 hours. Enjoy!
