Homemade Peppermint Patties

This is my Homemade Peppermint Patties recipe, the way I learned to make it as a kid - and a staple treat for the holiday season. Easy to make, and so much better than store bought. You would never BELIEVE the secret, base ingredient that the filling is built on!

YOU WILL NEED: Chocolate Baked Russet Potatoes Powdered Sugar Unsalted Butter Peppermint Extract Salt

Cut warm potatoes in half, scoop the insides into a mixing bowl. Add butter and salt, mash until as smooth as possible.

Stir in some of the powdered sugar - the mixture will go VERY liquid, don’t worry! Add the peppermint extract, slowly stir in the rest of the sugar til a thick dough forms.

Pinch off bits of the dough, roll into a ball, then flatten into a disk.  Freeze for at least 2 hours.

Chop the chocolate into small pieces (or use chocolate chips), place in a glass bowl, and carefully melt it.

When chocolate is fully melted and smooth, remove the frozen mint centers from the freezer and dip them one at a time.

Let mints cool until chocolate is hardened. Enjoy!
