    All Dressed Ketchup

    All Dressed Chips have long been a favourite in Canada... and now you can enjoy that flavour in ketchup form! All Dressed Ketchup is easy to make, and will elevate your summer burgers, fries, and more!

    A few months ago, I had an idea.

    We were eating seasoned fries - I think just some kind of Seasoned Salt, if memory serves - and I thought about how All Dressed fries would be really great.

    I do have a recipe for homemade All Dressed seasoning, after all. It was something I’d crave when I was still living in the USA, so obviously it had to happen. I’ve got it published on my Canadian Popcorn Seasoning Recipes post.

    Anyway, one idea led to another, and I decided that All Dressed Ketchup should be a thing.

    It would actually be a more accessible recipe than the powder, as it wouldn’t need specialty dried/powdered ingredients to get the right flavour.

    No need to freeze dried tomato powder, there’s ketchup. Vinegar powder? Nah, I can use actual vinegar.

    Things got busy, as they tend to... but I filed that idea away for later.

    Well, later is now, and I’m happy to say that All Dressed flavoured ketchup is DELICIOUS!

    It takes only a couple minutes to make - though it’s best after sitting in the fridge for a few hours - and is the ultimate flavour boost for hot dogs, hamburgers, fries, Tasti Taters (or “Tater Tots”, for the Americans!)... just whatever you’d normally use ketchup on.

    It’s got the same great sweet, smoky, acidic flavour as All Dressed Chips, just in dippable form!

    Anyway, let’s look at what you’ll need for a batch of your own All-Dressed Ketchup!

    Ingredients

    For the most part, this recipe uses simple ingredients that can be found in any larger grocery store... there’s just a fair amount of them.

    As always, I have a few notes for you:

    Liquid Smoke

    Until I started making my homemade jerky, I was NEVER a fan of liquid smoke.

    That said... it does some serious lifting in this recipe, and goes a long way to giving it an accurate “All Dressed Chips” flavour.

    It has a long shelf life, but if you’re not sure how else you’d use it... check out our dehydrator recipes blog, Dried and Tasty.

    Smoked Paprika

    As with the liquid smoke, the smoked paprika does a LOT of heavy lifting in this recipe, as it’s a big part of what makes all dressed potato chips taste the way they do.

    If you haven’t used smoked paprika before, you’re in for a treat - it brings a rich, smoky, deep flavour to anything we use it on.

    Anyway, the big thing to know here is that regular or sweet paprika isn’t a good substitute for it.

    It’ll taste fine enough, it just won’t taste like All-Dressed Chips.

    Citric Acid

    Citric acid may not be a common ingredient, but it is a great one for making certain things just taste “right”. It’s my secret ingredient in a LOT of recipes!

    It’s what I use to make non-citrus Fruit Curds that actually taste like the fruit used... rather than the lemon juice that’s commonly used to bring the acidity up.
    You can find it used in such things like my replica Beep Drink, as part of the fun rim on my Fuzzy Peach Candy Cocktail, and as part of my Wine Slush Mix - always a favourite for gifting!

    It’s also what brightens up my Sugar Free Jello, and what makes my Sugar Free Sour Gummies Recipes sour.

    In this case, it brings the acidity and tart flavour of this ketchup up to where it should be, to taste right.

    Everything Else

    Ketchup
    White Vinegar
    Mustard Powder
    Garlic Powder
    Onion Powder
    Allspice
    Celery Seed
    Ground Black Pepper
    Ground Cloves
    Salt

    ... I just don’t have anything to add, as far as these last few ingredients go. Pretty simple stuff!

    How to Make All Dressed Flavoured Ketchup

    The full recipe is in the printable recipe card at the bottom of this post, here is the visual walk through:

    In a medium bowl, whisk together the ketchup, vinegar, and liquid smoke until smooth and ALL the liquid is incorporated into the ketchup.

    Add the remaining ingredients, whisk until everything is incorporated and smooth.

    Note: Chilling will let the flavours develop, and also help the spices dissolve a bit better.

    If you’d like to help things along, you can GENTLY heat the ketchup mixture. Don’t bring it any further than the very start of a simmer, though!

    Heating is optional, but can make for a slightly smoother ketchup.

    Cover bowl with plastic wrap, chill for at least two hours.

    Whisk the All-Dressed Ketchup one more time before transferring to a clean - ideally sterilized - airtight container for storage.
