    Rainbow Fruit Skewers

    Looking for a colourful way to celebrate? Try these rainbow fruit skewers with mimosa cheesecake dip. Easy to make, but feels kinda fancy!

    I had meant to get this rainbow fruit kabobs post up as a New Year’s Eve party recipe, but time got away from me. Mea culpa!

    Luckily, these fresh fruit skewers - and the delicious dip - are the perfect snack for a wide variety of occasions.

    They’re a great addition to the menu for everything from a pool party and birthday parties, to events like a baby shower, bridal shower, Pride parties, or even St. Patrick’s Day festivities.

    Oh, and the best part?

    Going on the rainbow theme, there actually IS a pot of gold at the end of this rainbow - Mimosa Cheesecake Dip!

    A little bit of champagne (or sparkling grape juice, as a non-alcoholic option) makes this healthy snack feel celebratory - which is why I’d intended these delicious skewers as a New Year’s Eve appetizer!

    Whatever event - or non-event! - you serve these fresh fruit kabobs for, they’re a delicious way - and a beautiful way! - to serve a variety of fruit, and sure to become a family favorite.

    Ingredients

    This rainbow fruit skewers recipe uses simple ingredients that can be found in any grocery store.

    I like to look at it as 2 groups of ingredients: cream cheese dip and the fresh fruit kebabs

    Mimosa Cheesecake Dip

    To make the dip, you will need:

    Cream Cheese
    Heavy Whipping Cream / Heavy Cream
    Champagne (or non-alcoholic sparkling grape juice)
    Sweetener
    Zest of 1 Orange
    Salt

    As far as the sweetener goes, I like white / granulated sugar as a default. It’s a good, neutral flavoured choice.

    To make this dip keto friendly, use an Erythritol / Monkfruit Blend Sweetener.

    Powdered sugar can be used, but you’ll want to use about 50% more - go by taste.

    Maple sugar, honey, or brown sugar can be used 1:1 in place of all or some of the sugar, but either one will impart extra flavours on the dip.

    Rainbow Fruit Skewers Ingredients

    As-is, I used the following fruit for my rainbow fruit kebabs:

    Fresh Strawberries
    Cantaloupe
    Pineapple
    Kiwi Fruit
    Blackberries
    Blueberries

    But don’t let that stop you from using your favorite fruits to make these colorful fruit skewers! There’s a wide variety of fruits that would be suitable to stand in for any of the colors of the rainbow.

    Here’s a selection of fruit possibilities, by colour:

    Red / Pink: Dragon fruit (the pink variety, obviously!), red grapes, watermelon, strawberries, raspberries, pitted cherries.

    Orange: Mango, papaya, orange segments, cantaloupe, peaches.

    Yellow: Pineapple, mango, banana, star fruit, golden kiwis, canary melon, peaches.

    Green: Green grapes, honeydew, kiwi fruit, star fruit.

    Blue: Blueberries. That’s all I’ve got, LOL.

    Purple: Purple grapes , black grapes, blackberries, black raspberries, pitted dark cherries.

    Note: Some fruit are listed under more than one color - which they’re used as will depend on the variety, and how generous you want to be with defining a particular colour!

    As far as processing goes, larger fruit can be cut into bite-sized pieces, or scooped into little spheres with a melon baller.

    If your favorite fruit pieces are prone to browning - like bananas or apple slices - can be tossed with a little lemon juice to stall oxidation a bit.

    Also: Don’t worry too much about getting the exact same amount of everything, you’re going to end up with more of one fruit than another.

    Just make a quick fruit salad with the leftover fruit pieces. Done and done!

    Equipment

    In addition to the dip ingredients and a variety of fruits, there are a few pieces of equipment that help out with this dessert recipe:

    Mini Food Processor

    I use a mini food processor to blend the sugar, zest, and cream cheese together.

    You can use a stick blender, electric mixer, or stand mixer if you prefer, but the zest may not end up quite as well incorporated.

    Bamboo Skewers

    I like to use wooden skewers / wooden sticks, rather than metal skewers for fresh fruit skewers. They look better and are more comfortable, IMHO.

    As pictured, I used 10" Bamboo Skewers

    Depending on the size of the sticks, the sizing of the fruit pieces, and how many fruit pieces you want on each of the fruity kabobs, lollipop sticks could be used in a pinch.

    The lack of a pointed end makes threading them for difficult, though!

    How to Make Mimosa Cheesecake Dip

    The full recipe is in the recipe card at the end of this post, here is the pictorial walk through.

    In a mini food processor, blend the sugar, orange zest, and salt until smooth.

    Add the softened cream cheese, blend until smooth and well combined.

    Add the champagne / sparking juice, blend once more until smooth. Set aside.

    In a large bowl, use an electric hand mixer to beat the heavy cream until stiff peaks form.

    Add champagne cream cheese mixture to the bowl, fold until well combined.

    Cover with plastic wrap - or transfer to an airtight container - and chill until use.

    Rainbow Fruit Skewers

    Prepare your selection of fruits:

    Wash and hull the strawberries, if needed.

    Cut the cantaloupe in half. Use a spoon to scoop out the seeds and pulp from each melon half, discard. Cut into wedges. Cut the rind off the wedges, then cut the fruit into 1" chunks.

    Using a sharp knife, cut the top and bottom off the pineapple, then cut the rind / skin off. Cut into strips or slices, then into chunks.

    Using a paring knife, cut the skin off the kiwi fruit, then cut into thick slices. You can cut each slice in half, if you prefer.

    Pick through the blackberries and blueberries, discarding any mushy or overly blemished berries.

    Thread fruit pieces onto the sharp ends of the bamboo skewers in rainbow order.

    Arrange skewers in a single layer on a serving platter - in a rainbow shape, if you’re feeling extra about it, with the mimosa cheesecake dip in a small bowl nearby.

    Rainbow Fruit Skewers

    Mimosa Cheesecake Dip

    • ¼ cup Granulated Sugar or sweetener of choice - see blog post.
    • Zest of 1 Orange
    • pinch Salt
    • 8 oz Cream cheese softened
    • ¼ cup Champagne or non-alcoholic sparkling grape juice
    • 1 cup Heavy Whipping Cream

    Rainbow Fruit Skewers

    • 2 lb Fresh Strawberries
    • 1 Cantaloupe
    • 1 Pineapple
    • 6 Kiwi Fruit
    • 1 pint Blackberries
    • ½ pint Blueberries

    Instructions

    Mimosa Cheesecake Dip

    • In a mini food processor, blend the sugar, orange zest, and salt until smooth.
    • Add the softened cream cheese, blend until smooth and well combined. Add the champagne / sparking juice, blend once more until smooth. Set aside.
