Loaded Breakfast Corn Muffins

  These Homemade Breakfast Corn Muffins are easy to make, and an endlessly customizable recipe.     You can make them sweet or savory, vegetarian or with meat, for a complete breakfast on the go!

YOU WILL NEED: All-Purpose Flour Yellow Cornmeal Fresh or Frozen Corn Unsalted Butter Granulated Sugar Milk Honey Large Eggs Baking Powder Salt     See the linked post for information on all of the sweet and savory variations.

In a large bowl, beat together butter, sugar, and honey until light and fluffy.     Add eggs and milk, stirring carefully until well incorporated and smooth.  Set aside.

Combine flour, cornmeal, baking powder, and salt. Mix into the wet ingredients, stirring just until combined. Don't overwork it, or you'll end up with tough muffins!

Stir corn into batter - as well as any add-ins - mix just until distributed.

Spoon batter into prepared muffin pan, bake as directed in the linked recipe.

Enjoy your homemade corn muffins on their own, or as a side for a bowl of chili!
