    Mango Lassi Popsicles - a frozen version of a beloved Indian treat! The use of Greek yogurt gives it a really nice texture when frozen.

    As you may have guessed from some of our recipes - such as Cilantro Chicken, Chicken Shahi Korma, Butter Chicken, and ... well, the entire Indian Food category here - We LOVE Indian food.

    Actually, after posting all those links, I may have to pause writing this entry to order something from our favourite local Indian restaurant.

    It's lunchtime, I'm hungry, that all sounds amazing right now, and I'm too busy/lazy to cook something *right now*.

    Ok, no, I really am too distracted now and just put my computer down to order some Chicken Korma (me) and Palak Paneer (my husband). Looks like I'll have to finish this post after lunch... how's that for some "behind the scenes" insight? LOL

    *** 45 minutes later ***

    Oh, that was amazing. Bombay Touch in Stoney Creek... SO good.

    Massive food coma on the go now, but I'm going to finish writing this, rather than take a nap. So, you know... real quality writing coming your way at the moment!

    (The recipe itself was developed and written a week ago, no worries!)

    Anyway. Yes. We love Indian food, and back in the "Before Time" - when eating IN a restaurant was still a thing - we'd frequently order Mango Lassis with our meals.

    It's a rich, thick Indian drink made of mango puree and yogurt.

    The fruit and creaminess work well both together, and alongside Indian foods - the fruit complements pretty much everything, and the yogurt tends to be a great contrast for the spicy foods we order.

    Most of the time, it's spiced with a bit of cardamom, but some places leave that out.

    Mango Lassi Popsicles

    A while back - when we were re-shooting the Mango Daiquiri Panna Cottas - I was looking at the remainder of the mango pulp sitting in the can, and trying to decide what to make with it.

    I'd recently made the Southern Comfort Peaches N Cream Popsicles, so that was fresh on my mind - Popsicles, it was!

    I'd also had some more Vanilla Greek Yogurt left over, so the choice was pretty easy to make... and here we are!

    I went with Vanilla Greek yogurt - rather than unflavoured/unsweetened - for a couple reasons.

    For one, I think popsicles should be a little more sweet and desserty, and the vanilla yogurt nudges it more in that direction.

    Secondly, I really prefer the texture that Greek style yogurt gives popsicles. The way it freezes just has a nicer texture than the thinner yogurt, likely due to type/amount of excess moisture in the latter.

    As I mentioned on the Southern Comfort Peach Popsicles entry... I'm REALLY digging this popsicle mold we bought.

    We'd had another, it was annoying me, and I bit the bullet to not only replace something we already had, but also pay a bit more than I'd been hoping to for a mold. I justified it "for the blog", but honestly... it's so study and no-hassle, that I would have been thrilled with it even without a business justification.

    Life is too short to have to work with tools that annoy you!

    As with the peach popsicle recipe, this recipe makes enough to perfectly fill the 10 cavities in this particular mold. If you've got a smaller set, no worries - you can just drink the leftovers!

    Mango Lassi Popsicles

    Equipment

    • Popsicle Mold

    Ingredients

    • 1 ¾ cups Mango pulp We use Swad Kesar
    • 2 cups Vanilla Flavoured Greek yogurt
    • 2 tablespoon Honey Can substitute 2 tablespoon Granulated sugar
    • ½ teaspoon Cardamom powder

    Instructions

    • In a food processor, blend all ingredients together until smooth.
    • Pour mixture into popsicle molds of your choice
    • Set up and freeze according to manufacturer’s directions.
